Caring for your fruitcake
Like a fine wine, a fruitcake becomes even more delicious with time. As it matures, the flavours deepen and the texture becomes richer. If you wish, you can “feed” your cake every few weeks with a little brandy or dessert wine to help keep it beautifully moist and flavourful.
Storage tips
Wrap your cake in baking paper, then in cling wrap, and store it in an airtight container. Keep it in a cool, dry place away from direct sunlight. Avoid wrapping the cake directly in foil, as the fruit acids may react with the metal. Stored correctly, your fruitcake will stay moist and delicious for months. Cake will last for up to three years in its vacuum-sealed packaging.
Freezing
Fruitcake freezes exceptionally well for up to three years. For the best flavour, allow the cake to mature before freezing, as the ageing process pauses while frozen. Thaw completely at room temperature before serving.
